Honey Oat Bread

Ingredients:

1 1/2 cups water
1/2 cup honey
1/3 cup butter
5 1/2 cups unbleached flour
1 cup quick oats ( I use Coaches Oats from Costco, healthier and tastier than quick oats)
2 tsp salt
2 packages active dry yeast
2 TBSP ground flax seed
2 eggs
1 egg white and 1 TBSP oats for brushing and sprinkling on top of bread ( optional)

How To Make:

Place water, honey and butter in small saucepan. Heat over low heat until mixture is very warm.
First place oats, then 5 cups flour, flax, salt and yeast in mixer bowl.
If you have a mixer, attach dough hook, turn to speed 2 and mix, otherwise use spoon.
Gradually add warm water mixture to flour. Mix 1 more min.
Add eggs, mix 1 more minute.
Continuing on speed 2... or with your hands... add remaining flour 1/2 cup at a time. Mix/knead about 2 more min.
Place dough in greased bowl, covering to coat top.
Cover, let rise in warm place about 1 hour. It should double in bulk.

**In the winter, I turn my oven on 400 deg. for ONE minute, then turn it OFF and place the bread in the oven to rise. It makes the bread all cozy and happy.
Take bread out, punch down, divide in half.
Shape into 2 loaves ( I just do this quickly, I'm lazy.) Place in 2 greased bread pans.
Cover and let rise in warm place 1 more hour.
If your feeling industrious, beat egg white and a tsp of water in bowl and brush on top of bread (careful not to smush it) then sprinkle with oats.

Bake at 375 deg. for about 30 minutes. Remove from pans immediately and cool on wire racks.
