Zucchini Pirate Boats

How To Make Pirate Boats:



2 regular size zucchini
1/2 lb. ground turkey
1 small yellow onion
1 tsp vegetable oil
1 cup cooked Trader Joe's Brown Rice Medley
1/2 cup sliced mushrooms
1/2 of a red bell pepper
1/2 cup crumbled Feta Cheese
1 tsp Trader Joe's 21 season salute or similar spice
2 cups Free Range, low sodium chicken broth or water



Assembling your boats:


Cook your rice according to package directions, using chicken broth( takes about 20 minutes in a sauce pot or 8 minutes in your pressure cooker)
Preheat oven to 400
Meanwhile, cut your zucchini in half. With a small knife, score the inside of the zucchini about 1/4 inch from the sides to prevent scooping to much out. With a spoon, scrape out inside of zucchini, leaving about 1/4 inch on sides and bottom so they will stay together. Save insides for soups, baby food or zucchini bread. You can mix it in the filling too.
In a skillet, add 1 tsp oil and brown chopped onion, RBP and ground turkey, about 6 minutes, add mushrooms and seasoning, cook 2 more minutes. Set aside.
Mix together rice, turkey mixture and Feta. Scoop into hollowed out zucchini.
Place into a baking dish lined with foil (easy clean up).

Bake at 400 deg for about 20 minutes.
