Ingredients:
2 cups Unbleached flour
1 1/2 tsp baking pwdr
1 1/2 tsp apple pie spice
1/2 tsp baking soda
1 TBSP ground flax seed
1/4 cup butter softened ( this is cut in half also, they turned out just fine w/out the xtra butter thanks to the applesauce)
3/4 cup sugar (this is cut in half, the carrots add the xtra sweetness)
1 tsp vanilla
2 eggs
1 cup applesauce
1/4 cup buttermilk
1/2 cup grated carrot
1/2 cup grated zucchini
1/2 cup chopped walnuts or pecans (optional)
How To Make:
1. Preheat oven to 350 ° F. Line 24 muffin cups w foil bake cups, or spray.
2. In a med mixing bowl, combine flour, baking powder, apple pie spice, flax and baking soda. Set aside.
3. In a large bowl, beat butter with an electric mixer for 30 seconds. Add sugar and vanilla, beat until well combined. Add eggs, one at a time, beating well after each addition.
4. In a large measuring cup, combine applesauce and buttermilk. Alternately add applesauce mixture and flour mixture to butter mixture, beating on low speed after each addition just until combined. Add grated zucchini and carrots and walnuts, stir in.
5. Spoon batter into prepared muffin cups, filling each about 2/3 full. Bake in preheated oven for 18-20 min. or until a wooden toothpick inserted into middle of muffin comes out clean. Cool in pans on wire rack for 10 min.
